- 2kg watermelon, peeled, chopped
- 1 litre pineapple juice
- 1/4 cup chopped fresh mint leaves
- 1 litre sparkling mineral water, chilled
- Process or blend watermelon until smooth. Strain through a sieve over a large bowl. Discard seeds and pulp.
- Combine watermelon juice, pineapple juice and mint in a large bottle or jug. Chill until ready to serve.
- To serve, half-fill glasses with watermelon juice mixture. Top with mineral water.
