- 420g corn kernels
- 1/2 cup plain flour
- 2 eggs lightly beaten
- 1 tablespoon finely chopped fresh chives
- 2 green onions
- finely sliced 2 tablespoons olive oil
- Salt & Pepper to taste
- Combine corn, flour, eggs, chives and onion in a bowl.
- Heat oil in large pan over medium heat. Using 1 tablespoon mixture per fritter, cook 8 fritters for 4 minutes each side or until golden. Transfer to plate with paper towel.
- Repeat with remaining mixture to make 16 fritters.
- Serve with an avocado salsa and bacon for breakfast – YUM!
