Ingredients:
- 2 cups of pumpkin, cooked and mashed
- 1/4 teaspoon salt
- 2 tablespoons flour
- 1 egg, beaten
- 1 teaspoon baking powder
- butter or oil for pan frying
- sugar and ground cinnamon mix (1/4 cup sugar and 1 teaspoon ground cinnamon combined)
Method:
- Mix mashed pumpkin, salt, flour, egg and baking powder together
- Heat butter (or oil) in a shallow frying pan and place spoonfuls of pumpkin mixture into fry pan.
- Cook on both sides until golden
- Rest on a plate lined with paper towel, or a cooling rack to cool
