1 kilo chat potatoes
1 cup mayo
1 red onion
100g of ham
½ cup basil leaves
Boil potatoes, drain, then transfer to a bowl.
Combine mayo, 2 tbspns lemon juice, onion and salt in a small bowl.
Pour over warm potato, stir to coat.
Cook ham in a frying pan, set aside. Add ham, basil and remaining dressing to potato. Stir to combine.
