quick and easy – pumpkin fritters

Ingredients:

  • 2 cups of pumpkin, cooked and mashed
  • 1/4 teaspoon salt
  • 2 tablespoons flour
  • 1 egg, beaten
  • 1 teaspoon baking powder
  • butter or oil for pan frying
  • sugar and ground cinnamon mix (1/4 cup sugar and 1 teaspoon ground cinnamon combined)

Method:

  1. Mix mashed pumpkin, salt, flour, egg and baking powder together
  2. Heat butter (or oil) in a shallow frying pan and place spoonfuls of pumpkin mixture into fry pan.
  3. Cook on both sides until golden
  4. Rest on a plate lined with paper towel, or a cooling rack to cool
